Basic Bread Baking

Basic Bread Baking by Glenn Andrews
English | 1999 | ISBN: 1580172199 | 32 pages | EPUB | 1,8 MB
Bread’s my greatest weakness. There are worse ones, I know, though most of them don’t show up on your hips the way bread can.
There’s something so elemental about a good bread. It’s satisfying! It makes you feel well fed. And if it’s a bread you’ve made yourself, you also feel a lovely sense of gratification. In addition, you can make breads you’ll never find in any store or bakery — and, of course, you can brag to your friends.
Here you’ll find basic breads — white, whole wheat, and so on — and also some variations and specialty breads. Almost all are made with yeast; most are basic breads of one sort or another. Two (Cinnamon Raisin Bread and Monkey Bread) would come under the heading of sweet breads.
For those who aren’t fond of kneading, there are some “batter breads,” yeast breads that do not require any muscle-building exercise. (Some cherish the kneading process as a way to get rid of anxieties or frustrations, or at the very least to build their biceps. Others — and these are the ones who buy breadmakers and food processors — are fond of any way of making things easier.) And finally, there’s Kaleidoscope Bread, an amazing concoction that proves that not all great breads are leavened.
But first you’ll find a description of the key ingredients used in breadmaking and a section on bread-making techniques.
At the very end, you’ll find a few sources for grains, flours, mills, and all sort of other things that’ll come in handy for the breadmaking cook.

Cooking Innovations: Using Hydrocolloids for Thickening, Gelling, and Emulsification

Cooking Innovations: Using Hydrocolloids for Thickening, Gelling, and Emulsification by Amos Nussinovitch, Madoka Hirashima
2013 | ISBN: 143987588X | English | 384 pages | PDF | 59 MB
While hydrocolloids have been used for centuries, it took molecular gastronomy to bring them to the forefront of modern cuisine. They are among the most commonly used ingredients in the food industry, functioning as thickeners, gelling agents, texturizers, stabilizers, and emulsifiers. They also have applications in the areas of edible coatings and flavor release. Although there are many books describing hydrocolloids and their industrial uses, Cooking Innovations: Using Hydrocolloids for Thickening, Gelling, and Emulsification is the first scientific book devoted to the unique applications of hydrocolloids in the kitchen, covering both past uses and future innovations.

The Power of Ideas, 2nd Edition

The Power of Ideas by Isaiah Berlin
2013 | ISBN: 069115760X | English | 360 pages | EPUB | 2 MB
The essays collected in this new volume reveal Isaiah Berlin at his most lucid and accessible. He was constitutionally incapable of writing with the opacity of the specialist, but these shorter, more introductory pieces provide the perfect starting-point for the reader new to his work. Those who are already familiar with his writing will also be grateful for this further addition to his collected essays.
The connecting theme of these essays, as in the case of earlier volumes, is the crucial social and political role--past, present and future--of ideas, and of their progenitors. A rich variety of subject-matters is represented--from philosophy to education, from Russia to Israel, from Marxism to romanticism--so that the truth of Heine's warning is exemplified on a broad front. It is a warning that Berlin often referred to, and provides an answer to those who ask, as from time to time they do, why intellectual history matters.

Origins of Form: The Shape of Natural and Man-made Things

Origins of Form: The Shape of Natural and Man-made Things - Why They Came to Be the Way They Are and How They Change by Christopher Williams
2013 | ISBN: 1589798082 | English | 144 pages | PDF + EPUB | 7 MB + 21 MB
Origins of Form is about the shape of things. What limits the height of a tree? Why is a large ship or office building more efficient than a small one? What is the similarity between a human rib cage and an airplane or a bison and a cantilevered bridge? How might we plan for things to improve as they are used instead of wearing out? The author has chosen eight criteria that constitute the major influences on three-dimensional form. These criteria comprise the eight chapters of the book: each looks at form from entirely different viewpoints. The products of both nature and man are examined and compared.

Build APIs You Won\'t Hate
Build APIs You Won't Hate By Phil Sturgeon
English | 2014 | 143 Pages | ISBN: n/a | EPUB, MOBI, PDF | 2 MB + 7 MB + 13 MB
I've been building APIs for a long time now and it is becoming ever more common for server-side developer thanks to the rise of front-end javascript frameworks, iPhone applications and API-centric architectures. On one hand you're just grabbing stuff from a data source and shoving it out as JSON, but surviving changes in business logic, database schema updates, new features or deprecated endpoints, etc gets super difficult.
I found most resources out there to be horribly lacking or specifically aimed at one single framework. Many tutorials and books use apples and pears examples which are not concrete enough, or talk like listing /users and /users/1 are the only endpoints you'll ever need. I've spent the last year working at a company called Kapture where my primary function has been to inherit, rebuild, maintain and further develop a fairly large API with many different endpoints exposing a lot of different use-cases.

Be Excellent at Anything: The Four Keys To Transforming the Way We Work and Live

Tony Schwartz, Jean Gomes, Catherine McCarthy, "Be Excellent at Anything: The Four Keys To Transforming the Way We Work and Live"
English | ISBN: 1451610262, 1439127662 | 2010 | EPUB | 352 pages | 3 MB
"The Way We're Working Isn't Working "is one of those rare books with the power to profoundly transform the way we work and live. Demand is exceeding our capacity. The ethic of "more, bigger, faster" exacts a series of silent but pernicious costs at work, undermining our energy, focus, creativity, and passion. Nearly 75 percent of employees around the world feel disengaged at work every day. "The Way We're Working Isn't Working "offers a groundbreaking approach to reenergizing our lives so we're both more satisfied and more productive--on the job and off. By integrating multidisciplinary findings from the science of high performance, Tony Schwartz, coauthor of the #1 bestselling "The Power of Full Engagement, "makes a persuasive case that we're neglecting the four core needs that energize great performance: sustainability (physical); security (emotional); self-expression (mental); and significance (spiritual). Rather than running like computers at high speeds for long periods, we're at our best when we pulse rhythmically between expending and regularly renewing energy across each of our four needs. Organizations undermine sustainable high performance by forever seeking to get more out of their people. Instead they should seek systematically to meet their four core needs so they're freed, fueled, and inspired to bring the best of themselves to work every day. Drawing on extensive work with an extra-ordinary range of organizations, among them Google, Ford, Sony, Ernst & Young, Shell, IBM, the Los Angeles Police Department, and the Cleveland Clinic, Schwartz creates a road map for a new way of working. At the individual level, he explains how we can build specific rituals into our daily schedules to balance intense effort with regular renewal; offset emotionally draining experiences with practices that fuel resilience; move between a narrow focus on urgent demands and more strategic, creative thinking; and balance a short-term focus on immediate results with a values-driven commitment to serving the greater good. At the organizational level, he outlines new policies, practices, and cultural messages that Schwartz's client companies have adopted. "The Way We're Working Isn't Working "offers individuals, leaders, and organizations a highly practical, proven set of strategies to better manage the relentlessly rising demands we all face in an increasingly complex world.
